This is a mini post really, mainly to show how one recipe can easily be adapted for another. It is basically a mixture of the Baileys Cheesecake recipe and the orange curd from the Individual Meringue Pies. Yes, I am slightly obsessed with blood oranges but they will be out of season soon so I’ll shut up about them then! You can use any citrus flavour you want: lemon, orange, lime or grapefruit. You can also buy a good quality curd to use on top if you prefer not to make it.
Make the cheesecake but leave out the Baileys – I don’t normally recommend this but trust me, it won’t work here – and add 2 tsp of vanilla extract and the grated zest of one of your chosen fruits to the filling instead. Top the cheesecake with a few spoonfuls of curd and spread it out in a thin layer. It sounds like a heavy dessert but it is very fresh tasting, a small piece would be ideal after a big meal.
