I’m not one for dry January or any of that clean eating craic, but even I crave a lighter dinner once in a while. One of my favourite salads to make midweek is my Warm Chicken and Bacon Salad. Let’s face it though, there is nothing light about it.
I recently saw a post for a shaved asparagus recipe and I thought it looked so elegant I’d have to give it a go. My efforts don’t look quite as elegant!
I can’t wait til there’s a grand stretch in the evenings. Winter light is no friend to food photography, I mean, I struggle at the best of times. So you’ll have to trust me when I say this salad tasted and looked much better than the photo suggests.
