Coconut and Lime Pulled Chicken with Kimchi Style Slaw

Now there’s a mouthful of a recipe title for you. I have been meaning to post this recipe for Coconut and Lime Pulled Chicken with Kimchi Style Slaw for quite a while now. In fact, ever since I discovered The Reckless Chef in the West Waterford Festival of Food last year. We were strolling among the […]

Easy Chicken Satay Curry

I make a curry at least once a week and try to mix it up as much as I can. I already have a recipe up for Beef Satay Skewers and I do love it. The beef becomes tender in the marinade and chars beautifully on the skewer. However, sometimes you just want to keep it […]

Aubergine Chickpea and Tomato Curry

Beef Satay Skewers

For years I thought Satay was a Chinese dish. This was probably due to the fact that the most exotic food we had growing up was from the local takeaway where they had the skewers as a starter dish!

Butternut Squash, Coconut and Chilli Soup

I would never have thought that I’d be posting a recipe for soup in June, but here we are. As there is still a real chill in the air I’m not quite ready to commit to salads at all times just yet.

Malaysian Lentil and Squash Curry

This curry is adapted from Jasmine & Melissa Hemsley’s The Art of Eating Well. Yes, they are the ladies leading the health craze and responsible for making ‘spiralizer‘ and ‘bone broth’ the buzz words of 2015.
