I don’t normally post on a Monday but I’ve done a little redesign on the site and part of this was introducing a “Meat Free” section. So what better day than Meat Free Monday to post?!
People think food bloggers are constantly whipping up exotic meals in 10 minutes for dinner. Not true. Well, not in my case anyway. I’m fairly predictable, particularly midweek when I usually make some sort of a pasta dinner, a chicken salad, something with steak and a curry.
Now I know what you’re thinking, “Another Chicken Salad recipe?” I wasn’t joking when I said I like to make a quick chicken salad during the week. After making my Grilled Peach Cherry and Goats Cheese Salad, I decided to adapt it to make this Chicken Peach and Mozzarella Salad.
I am always looking for new chicken salad recipes. For me, it’s an easy way to get a quick tasty dinner on the table in under 30 minutes. Himself gets his meat and I get to fool myself that I am eating healthily!

Ish. There is nothing traditional about this Beef Stroganoff so I struggled with what to call it. There are onions, mushrooms, garlic, paprika and tomato puree, none of which are traditional. It does have seared steak, brandy and sour cream so on that basis, I’m sticking with Beef Stroganoff.
